The culinary scientists at Seattle University took time out of their busy day yesterday to whip up a few batches of liquid nitrogen ice cream.

Chemistry professor Dr. Sue Jackels enlisted physics students Elizabeth Brasseale and Andrew Hankins to make the treat.

Making liquid nitrogen ice cream might sound like a complicated process, but in actuality it’s as simple as pouring the nitrogen onto the mixture of custard, cream and vanilla. Add a few minutes of vigorous stirring and you’ve got yourself some ice cream.

The students made both chocolate and vanilla ice cream and served up the treats to the local kids who came to watch the fun.
